🍋 Lemon Custard Cake 🍋

Ingredients for lemon custard:

  • 1 egg 🥚
  • 50 g of sugar 🍚
  • 40 g of corn starch 🌽
  • Juice of 1 lemon 🍋
  • Grated lemon zest 🍋
  • 300 ml of milk 🥛

Ingredients for the dough:

  • 2 eggs 🥚🥚
  • 100 g of sugar
  • 1 packet of vanilla sugar 🍬
  • 120 ml of seed oil 🌻
  • 120 ml of milk 🥛
  • 220 g of flour 00 🌾
  • 15 g of pastry yeast

Other:

  • 22cm mold 🍰

Procedure:

Preparation of lemon custard:

  1. In a bowl:

    • Beat the egg with sugar until you get a clear and foamy compound. 🥚 🍚
  2. Add the cornstarch:

    • Mix well to avoid lumps. 🌽
  3. In a small pot:

    • Heat milk with lemon zest until it is almost boiling. 🥛🍋
  4. Pour the hot milk:

    • Slowly in the egg and sugar compound, stirring constantly. 🥣
  5. Put the compound back on the fire:

    • Add lemon juice and cook over medium heat, stirring constantly, until the cream thickens. 🍋🔥
  6. Remove from the fire:

    • Leave the custard covered with transparent film to prevent the film from forming. ❄️

Preparation of the dough:

  1. Preheat the oven to 180°C:

    • Prepare a 22 cm mold, buttering and flouring slightly. 🔥
  2. In a big bowl:

    • Beat eggs with sugar and vanilla sugar until you get a clear and bubbly compound. 🥚 🍚🍬
  3. Add the seed oil:

    • And milk, stir well. 🌻🥛
  4. Incorporate the flour:

    • And sift the yeast, mixing gently until you get a smooth and homogeneous dough. 🌾 🌾

Assemble:

  1. Pour about half the dough into the prepared mold. 🍰
  2. Add lemon custard, distributing it evenly over the dough. 🍋
  3. Cover with the rest of the batter, leveling the surface with a spatula. 🍰
  4. Bake in a preheated oven to 180°C for about 35-40 minutes, or until a skewer inserted in the center comes out clean. 🔥⏱️
  5. Let it cool down in the pan for a few minutes, then transfer to a grill to cool completely. ❄️
  6. Before serving, you can sprinkle with icing sugar for an elegant presentation. 🍚❄️
