Ultimate Breakfast Steak & Eggs with Home Fries 🥩🍳

Ingredients:

For the Steak:

  • 2 ribeye or sirloin steaks
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

For the Eggs:

  • 4 large eggs
  • 2 tbsp butter
  • Salt and pepper to taste

For the Home Fries:

  • 4 large potatoes, peeled and diced
  • 1 small onion, chopped
  • 1 green bell pepper, chopped
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

Prepare the Steak:

  1. Rub steaks with olive oil, salt, pepper, garlic powder, and smoked paprika. Let them sit at room temperature for 10-15 minutes.
  2. Heat a skillet over medium-high heat. Cook the steaks for 3-4 minutes on each side for medium-rare, or until they reach your desired doneness. Remove from the pan and let rest.

Cook the Home Fries:

  1. Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook for 10-12 minutes, stirring occasionally until they start to crisp.
  2. Add chopped onion, bell pepper, paprika, garlic powder, salt, and pepper. Cook for another 8-10 minutes until the potatoes are golden and cooked through. Garnish with fresh parsley.

Prepare the Eggs:

  1. In a separate pan, melt butter over medium heat. Crack eggs into the pan, season with salt and pepper, and cook to your preferred style (sunny-side-up, over-easy, scrambled, etc.).

Assemble the Plate:

  1. Slice the rested steaks and serve with eggs and a generous portion of home fries.

Notes:

  • Serve with toast or a side of fresh fruit for a complete breakfast feast.
