Super Yummy Caramel Custard Cake 
This creamy and delicious caramel custard cake, shared by Savor Easy, combines a rich, silky custard with a soft, airy cake. The caramel topping melts in your mouth, making it the perfect indulgent dessert!
Ingredients:
For the Caramel:
- ยฝ cup (100g) sugar
- 3 tbsp + 2 tbsp water
For the Custard:
- 2 whole eggs
- 2 egg yolks
- ยฝ cup (150g) sweetened condensed milk
- 1 cup (250ml) evaporated milk
- ยฝ tsp (3ml) vanilla extract
- A pinch of salt
For the Cake Batter:
- 2 egg yolks
- 3 tbsp (45ml) oil
- ยฝ tsp (3ml) vanilla
- ยผ cup (60ml) milk
- ยฝ cup (62g) all-purpose flour
- ยฝ tsp (3g) baking powder
- ยฝ tsp (3g) salt
- 3 egg whites
- ยฝ tsp (2ml) white vinegar
- ยผ cup (50g) sugar
Instructions:
Step 1: Make the Caramel
- In a pan over medium-low heat, add ยฝ cup sugar and 3 tbsp water. Stir constantly until the sugar turns golden brown.
- Add 2 more tbsp of water, stir well, and pour the caramel into the bottom of a loaf pan. Set aside to cool.
Step 2: Prepare the Custard
- In a large mixing bowl, whisk together 2 whole eggs, 2 egg yolks, and ยฝ cup sweetened condensed milk until combined.
- Add 1 cup evaporated milk, ยฝ tsp vanilla extract, and a pinch of salt. Whisk again until smooth. Set aside.
Step 3: Prepare the Cake Batter
- In another bowl, whisk together 2 egg yolks, 3 tbsp oil, and ยฝ tsp vanilla until combined.
- Add ยผ cup milk and whisk until smooth.
- Sift in ยฝ cup all-purpose flour, ยฝ tsp baking powder, and ยฝ tsp salt. Stir until well combined.
Step 4: Make the Meringue
- In a separate bowl, whisk 3 egg whites with ยฝ tsp white vinegar.
- Once frothy, gradually add ยผ cup sugar while whisking until medium peaks form.
- Gently fold a dollop of the meringue into the cake batter to loosen it up. Then, fold the rest of the meringue into the batter until fully incorporated.
Step 5: Assemble and Bake
- Strain the custard mixture into the caramel-lined loaf pan, then pour the cake batter on top of the custard.
- Preheat the oven to 350ยฐF (180ยฐC) and bake for 45-50 minutes.
- Let the cake cool completely. Place a plate on top of the pan and carefully flip it over to unmold the cake, allowing the caramel to cascade down.
Step 6: Serve
