Sausage and Pepper Tortellini Pasta🍝🌶️😋

Ingredients:

  • 1 pound Italian sausage, casing removed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 package (20 ounces) cheese tortellini
  • 1 can (14.5 ounces) diced tomatoes
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Directions:

  1. Cook the tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the Italian sausage and cook until browned and cooked through, breaking it into pieces with a spatula. Remove the sausage from the skillet and set aside.
  3. In the same skillet, add the sliced bell peppers and onion. Cook until softened, about 5-7 minutes.
  4. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  5. Return the sausage to the skillet and add the diced tomatoes, heavy cream, and Italian seasoning. Stir to combine and bring to a simmer.
  6. Add the cooked tortellini to the skillet and toss to coat with the sauce. Cook for another 2-3 minutes until heated through.
  7. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
  8. Garnish with fresh basil if desired and serve immediately.
