Ingredients:

Instructions:

  1. Preheat your oven to 160°C and tape a sulfurized paper baking sheet.
  2. In a bowl, mix grated coconut, powdered sugar, and vanilla extract.
  3. In another bowl, beat the egg whites until stiff peaks form, gradually adding the icing sugar.
  4. Gently incorporate the coconut mixture with the meringue, making sure you don’t overmix.
  5. Using a spoon, form small piles of dough on the prepared baking sheet, spacing them a few centimeters apart.
  6. Bake for 15 to 20 minutes, or until the macaroons are slightly golden brown.
  7. Allow to cool completely before removing the macaroons from the sheet.
