Ingredients:
- 100 grams of grated coconut
- 100 grams of powdered sugar
- 2 egg whites
- 50 grams of icing sugar
- 1/2 teaspoon of vanilla extract
Instructions:
- Preheat your oven to 160Β°C and tape a sulfurized paper baking sheet.
- In a bowl, mix grated coconut, powdered sugar, and vanilla extract.
- In another bowl, beat the egg whites until stiff peaks form, gradually adding the icing sugar.
- Gently incorporate the coconut mixture with the meringue, making sure you don’t overmix.
- Using a spoon, form small piles of dough on the prepared baking sheet, spacing them a few centimeters apart.
- Bake for 15 to 20 minutes, or until the macaroons are slightly golden brown.
- Allow to cool completely before removing the macaroons from the sheet.
