Lemon Pepper Chicken Skewers
Ingredients:
For the chicken marinade:
- 2 lbs boneless skinless chicken thighs (or chicken breast), cut into bite-sized pieces
- 2 tbsp paprika
- 2 tsp black pepper
- Zest from one lemon
- 1 tbsp fresh lemon juice
- 3 cloves garlic, finely minced
- 2 tsp salt
- 2 tbsp olive oil
For the lemon pepper garlic butter:
- Β½ cup salted butter, softened
- 2 tsp black pepper
- 2 tsp paprika
- 1 tbsp fresh lemon juice
- Zest from one lemon
- 1 tsp honey
- 1 tsp garlic, grated or finely minced
Instructions:
- If using wooden skewers, soak in water for 15-30 minutes.
- In a bowl or Ziploc bag, mix chicken and all marinade ingredients. Marinate.
- Prepare the lemon pepper garlic butter by combining all butter ingredients. Set aside 2 tbsp for later use.
- Skewer the chicken tightly onto wooden or metal skewers.
- Air fryer method: Cook at 400Β°F for 7-8 minutes, baste, flip, and cook for another 6-7 minutes.
BBQ method: Grill over medium-high heat for 5-6 minutes per side, basting before and after flipping.
Pan-fried method: Cook in a pan over medium-high heat for 6-7 minutes per side, basting before and after flipping. - Once cooked, baste with reserved butter and serve immediately.
