Ingredients:

  • 1 lb (450 g) steak (sirloin or ribeye), cut into bite-sized cubes
  • 2 tablespoons olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 6-8 metal or wooden skewers (soaked if using wooden)

For basting:

  • 2 tablespoons melted butter
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice

Directions:

  1. Marinate the steak: In a large bowl, combine the olive oil, rosemary, garlic, lemon juice, salt, black pepper, and red pepper flakes (if using). Add the steak cubes and toss to coat. Marinate for at least 30 minutes in the fridge.
  2. Prepare the skewers: Thread the marinated steak cubes onto the skewers, leaving a little space between each piece for even cooking.
