Ingredients:

  • 4 cups all-purpose flour

  • 1 tsp baking powder
  • 1 cup vegetable shortening
  • 1 cup warm water

Instructions:

  1. Mix Dry Ingredients:

    In a large mixing bowl, combine the flour, salt, and baking powder.

  2. Incorporate Shortening:

    Add the vegetable shortening to the dry ingredients. Use your hands or a pastry cutter to mix until the mixture resembles coarse crumbs.

  3. Add Water:

    Gradually add the warm water to the flour mixture, stirring or kneading until a dough forms. You may not need all of the water, so add it gradually until the dough holds together and is smooth.

  4. Rest the Dough:

    Place the dough in a Ziploc bag or cover it with a clean cloth. Let it rest at room temperature for at least 1 hour. This helps the dough relax and become easier to roll out.

  5. Divide and Roll Out:

    After resting, divide the dough into small balls, about the size of golf balls.

  6. Roll Out the Tortillas:

    On a lightly floured surface, roll each ball of dough into a thin circle, about 6-8 inches in diameter. Use a rolling pin to achieve a uniform thickness.

  7. Cook the Tortillas:

    Heat a griddle or large skillet over medium-high heat.

    Place a rolled-out tortilla onto the hot griddle. Cook for about 1-2 minutes on the first side, until bubbles begin to form on the surface.

  8. Flip and Cook:

    Flip the tortilla and cook for another 1-2 minutes on the second side, until lightly browned and cooked through. It should puff slightly.

  9. Keep Warm:

    Remove the cooked tortilla from the griddle and keep warm wrapped in a clean kitchen towel or in a tortilla warmer while you cook the remaining tortillas.

  10. Serve and Enjoy:
