Healthy Steak Fajita Roll-Ups
Ingredients:
For the steak roll-ups:
- 1 lb. thinly sliced sirloin steak, pounded thin, cut into 1″x3″ strips
- 2 Tbsp avocado or olive oil, divided
- 3 bell peppers (different colors), cut into thin strips
- 1 large yellow onion, sliced into strips
- 2-3 green onions, green parts sliced
- Fresh parsley or cilantro, chopped
For the fajita seasoning:
- 1 tsp chili powder
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp smoked paprika
- 1/2 tsp sea salt
- 1/4 tsp ground black pepper
Instructions:
- Whisk all fajita seasoning ingredients in a small bowl.
- Heat 1 tablespoon oil in a large skillet over medium-high heat.
- Add onions and bell peppers, season with half the fajita seasoning, and cook for 3-4 minutes until crisp-tender.
- Remove peppers and onions from the pan and set aside.
- Lay steak strips on a cutting board, sprinkle with remaining seasoning, and top with peppers and onions. Roll up and secure with toothpicks.
- Heat the remaining oil in the skillet over medium-high heat.
- Cook steak roll-ups for about 2 minutes per side until golden brown.
- Sprinkle with parsley/cilantro and green onions. Enjoy while hot!
