π Grilled Chicken and Avocado Salad π
Ingredients:
- 1 chicken breast (grilled and chopped)
- 1 avocado, diced
- 1/2 cup corn (canned or grilled)
- 1/2 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh parsley or cilantro, chopped
- 4-5 cups mixed salad greens (romaine, lettuce, etc.)
- 2 tablespoons olive oil
- Salt and pepper to taste
For the Dressing:
- 1/4 cup Greek yogurt or mayonnaise
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions:
Grill the Chicken:
Season the chicken breast with salt, pepper, and olive oil. Grill until fully cooked, about 6-7 minutes on each side. Let it cool slightly, then chop into bite-sized pieces.
Prepare the Salad:
In a large bowl, add the mixed greens, sliced cucumbers, halved cherry tomatoes, red onion, corn, and diced avocado.
Add the grilled chicken pieces on top.
Make the Dressing:
In a small bowl, whisk together the Greek yogurt (or mayonnaise), olive oil, lemon juice, Dijon mustard, salt, and pepper until smooth.
Combine and Serve:
Drizzle the dressing over the salad and gently toss to combine, making sure everything is coated.
Garnish with fresh parsley or cilantro and serve immediately.
