Ingredients:
For the Pork Chops:

  • 4 boneless pork chops
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup bread crumbs
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
For the Cheesy Scalloped Potatoes:

  • 2 pounds potatoes, peeled and thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish
Instructions:
Preheat the Oven:

  • Preheat the oven to 375°F (190°C).
  • Grease a baking dish with butter or non-stick spray.
Prepare the Pork Chops:

  • Season the pork chops with salt and pepper on both sides.
  • In a small bowl, mix together the minced garlic, grated Parmesan cheese, bread crumbs, dried thyme, dried oregano, and paprika.
  • Press the Parmesan mixture onto both sides of each pork chop, coating them evenly.
Cook the Pork Chops:

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the pork chops and cook for 3-4 minutes per side, or until golden brown.
  • Remove the pork chops from the skillet and transfer them to the prepared baking dish.
Prepare the Cheesy Scalloped Potatoes:

  • In the same skillet, melt the butter over medium heat.
  • Stir in the flour and cook for 1-2 minutes, until bubbly.
  • Gradually whisk in the milk, stirring constantly, until the mixture is smooth and thickened.
  • Remove from heat and stir in the shredded cheddar cheese until melted. Season with salt and pepper to taste.
  • Arrange the sliced potatoes in the prepared baking dish in an even layer.
  • Pour the cheese sauce over the potatoes, covering them evenly.
Bake:

  • Cover the baking dish with foil and bake in the preheated oven for 45 minutes.
  • Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown.
Serve:

  • Remove from the oven and let it rest for a few minutes before serving.
  • Garnish with chopped fresh parsley.
