Found this online and thought I’d share because I always overcook the baguette, personally:

Ingredients

  • 1 large baguette, sliced into 1/2 inch pieces
  • 2 tablespoons olive oil
  • 2 ripe tomatoes, diced
  • 1 cup fresh basil leaves, chopped
  • 8 ounces burrata cheese
  • Salt and pepper to taste
  • Balsamic glaze for drizzling

Preheat and Prep

Start by preheating your oven to 400°F (200°C). While it warms, arrange your baguette slices on a baking sheet and lightly brush each with olive oil. This will ensure your bruschetta bases are perfectly golden and crisp.

Bake to Perfection

Place the baking sheet in the oven for about 5-7 minutes. You’re looking for a delicate golden edge and a crispy texture.

Mix the Toppings

While the bread is toasting, toss together the diced tomatoes and chopped basil in a mixing bowl. Season with salt and pepper according to your taste preferences.

Assemble with Care

Once your baguette slices have achieved their perfect crispness, remove them from the oven and let them cool just a tad. Then, top each slice with a generous spoonful of creamy burrata and a heap of the tomato-basil mixture.

The Final Drizzle

Just before serving, drizzle each bruschetta slice with balsamic glaze. This not only adds a depth of flavor but also makes for an aesthetically pleasing finish.
