Crab Stuffed Cheddar Bay Biscuits with Lemon Butter Sauce

Ingredients:

For the Biscuits:

  • 2 cups Bisquick mix
  • 1/2 cup cold butter (cubed)
  • 1 cup shredded sharp cheddar cheese
  • 2/3 cup milk
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon Old Bay seasoning

For the Crab Filling:

  • 1 cup lump crab meat
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1/2 teaspoon Old Bay seasoning
  • 1 green onion, finely chopped

For the Lemon Butter Sauce:

  • 1/2 cup butter
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper to taste

Instructions:

Prepare the Biscuits:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the Bisquick mix and cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  3. Stir in the shredded cheddar cheese, milk, garlic powder, and Old Bay seasoning until just combined.

Prepare the Crab Filling:

  1. In a medium bowl, mix together the crab meat, mayonnaise, Dijon mustard, lemon juice, Old Bay seasoning, and chopped green onion until well combined.

Assemble the Biscuits:

  1. Scoop about 2 tablespoons of biscuit dough and flatten it slightly in your hand.
  2. Place about 1 tablespoon of crab filling in the center of the dough, then fold the dough around the filling to encase it completely. Place the filled biscuit on the prepared baking sheet.
  3. Repeat with the remaining dough and crab filling.

Bake the Biscuits:

  1. Bake the biscuits in the preheated oven for 10-12 minutes, or until golden brown and cooked through.

Prepare the Lemon Butter Sauce:

  1. While the biscuits are baking, melt the butter in a small saucepan over medium heat.
  2. Add the minced garlic and cook for 1-2 minutes until fragrant.
  3. Stir in the lemon juice, chopped parsley, salt, and pepper. Cook for an additional 1-2 minutes.

Serve:

  1. Once the biscuits are done, brush them with the lemon butter sauce and serve immediately.
