Chicken Ricotta Meatballs with Spinach Alfredo Sauce π
Ingredients:
- 1 lb ground chicken
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 1 tbsp Italian seasoning
- Salt and pepper to taste
Sauce:
- 2 tbsp butter
- 1 clove garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- Salt and pepper to taste
Directions:
- Preheat Oven: 400Β°F (200Β°C).
- Mix Meatballs: Combine chicken, ricotta, Parmesan, egg, breadcrumbs, garlic, seasoning, salt, and pepper. Form into meatballs.
- Bake Meatballs: Bake for 20-25 minutes.
- Make Sauce: SautΓ© garlic in butter. Add cream and simmer. Stir in Parmesan and spinach, cook until wilted.
- Serve: Pour sauce over meatballs. Enjoy with pasta.
