Chicken Ricotta Meatballs with Spinach Alfredo Sauce 🍝

Ingredients:

  • 1 lb ground chicken
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/2 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste

Sauce:

  • 2 tbsp butter
  • 1 clove garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • Salt and pepper to taste

Directions:

  1. Preheat Oven: 400°F (200°C).
  2. Mix Meatballs: Combine chicken, ricotta, Parmesan, egg, breadcrumbs, garlic, seasoning, salt, and pepper. Form into meatballs.
  3. Bake Meatballs: Bake for 20-25 minutes.
  4. Make Sauce: Sauté garlic in butter. Add cream and simmer. Stir in Parmesan and spinach, cook until wilted.
  5. Serve: Pour sauce over meatballs. Enjoy with pasta.
