Ingredients
Biscuit Base:
- 1.5 cups (300g) digestives, crushed
- 0.67 cups (150g) unsalted butter, melted
Cheesecake Filling:
- 2 cups (500g) full-fat cream cheese, softened
- 1 tsp vanilla extract
- 0.8 cups (100g) icing sugar
- 0.6 cups (150g) caramel
- 1.25 cups (300ml) double cream, whipped
- 1 cup (175g) chopped Rolos
Decorations:
- 0.6 cups (150ml) double cream
- 2 tbsp icing sugar
- 0.2 cups (50g) caramel
- Rolos and sprinkles for topping
Instructions
Prepare the Biscuit Base:
- Crush the digestives until they resemble fine crumbs. You can use a food processor or place them in a sealed plastic bag and crush them with a rolling pin.
- Mix the crushed digestives with the melted butter until well combined.
- Press the mixture into the base of a 9-inch (23cm) springform pan, ensuring an even layer. Use the back of a spoon or a flat-bottomed glass to smooth it out.
- Place the pan in the refrigerator to set while you prepare the filling.
Make the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese, vanilla extract, and icing sugar until smooth and creamy.
- Add the caramel and mix until well combined.
- Gently fold in the whipped double cream until fully incorporated.
- Fold in the chopped Rolos.
Assemble the Cheesecake:
- Pour the cheesecake filling over the chilled biscuit base, spreading it evenly.
- Smooth the top with a spatula.
- Place the cheesecake in the refrigerator to set for at least 4 hours or overnight for best results.
Prepare the Decorations:
- In a medium bowl, whip the double cream with the icing sugar until soft peaks form.
- Transfer the whipped cream to a piping bag fitted with a star nozzle.
- Drizzle the caramel over the set cheesecake.
- Pipe swirls of whipped cream around the edge of the cheesecake.
- Decorate with additional Rolos and sprinkles as desired.
Serve:
- Carefully remove the cheesecake from the springform pan and transfer it to a serving plate.
