Caramel Rolo Cheesecake

Ingredients

Biscuit Base:

  • 1.5 cups (300g) digestives, crushed
  • 0.67 cups (150g) unsalted butter, melted

Cheesecake Filling:

  • 2 cups (500g) full-fat cream cheese, softened
  • 1 tsp vanilla extract
  • 0.8 cups (100g) icing sugar
  • 0.6 cups (150g) caramel
  • 1.25 cups (300ml) double cream, whipped
  • 1 cup (175g) chopped Rolos

Decorations:

  • 0.6 cups (150ml) double cream
  • 2 tbsp icing sugar
  • 0.2 cups (50g) caramel
  • Rolos and sprinkles for topping

Instructions

Prepare the Biscuit Base:

  1. Crush the digestives until they resemble fine crumbs. You can use a food processor or place them in a sealed plastic bag and crush them with a rolling pin.
  2. Mix the crushed digestives with the melted butter until well combined.
  3. Press the mixture into the base of a 9-inch (23cm) springform pan, ensuring an even layer. Use the back of a spoon or a flat-bottomed glass to smooth it out.
  4. Place the pan in the refrigerator to set while you prepare the filling.

Make the Cheesecake Filling:

  1. In a large mixing bowl, beat the softened cream cheese, vanilla extract, and icing sugar until smooth and creamy.
  2. Add the caramel and mix until well combined.
  3. Gently fold in the whipped double cream until fully incorporated.
  4. Fold in the chopped Rolos.

Assemble the Cheesecake:

  1. Pour the cheesecake filling over the chilled biscuit base, spreading it evenly.
  2. Smooth the top with a spatula.
  3. Place the cheesecake in the refrigerator to set for at least 4 hours or overnight for best results.

Prepare the Decorations:

  1. In a medium bowl, whip the double cream with the icing sugar until soft peaks form.
  2. Transfer the whipped cream to a piping bag fitted with a star nozzle.
  3. Drizzle the caramel over the set cheesecake.
  4. Pipe swirls of whipped cream around the edge of the cheesecake.
  5. Decorate with additional Rolos and sprinkles as desired.

Serve:

  1. Carefully remove the cheesecake from the springform pan and transfer it to a serving plate.
  2. Slice and enjoy this indulgent Caramel Rolo Cheesecake!
