Ingredients:

Cajun Spice Blend:

  • 1 tbsp garlic powder 🧄
  • 1 tbsp onion powder 🧅
  • 1/2 tbsp Old Bay seasoning 🌿
  • 1 tsp lemon pepper 🍋
  • 1 tsp smoked paprika 🌶️
  • 1 tsp chili powder 🌶️
  • 1 tsp black pepper 🌑
  • 1 tsp Italian seasoning 🌿
  • Pinch of salt 🧂
  • 1/2 tsp cumin 🌾

Seafood and Rice:

  • 1 lb shrimp, peeled and deveined 🍤
  • 1 lb salmon fillet, cut into chunks 🐟
  • 2 cups cooked rice 🍚
  • 2 tbsp olive oil 🫒
  • 1 bell pepper, chopped 🌶️
  • 1 onion, chopped 🧅
  • 3 cloves garlic, minced 🧄
  • 1 cup chicken or seafood broth 🍲
  • Juice of 1 lemon 🍋
  • Fresh parsley, chopped 🌿

Instructions:

  1. Prepare the Cajun Spice Blend:
    • In a small bowl, combine all the spice blend ingredients. Mix well.
  2. Season the Seafood:
    • In a large bowl, toss the shrimp and salmon chunks with the Cajun spice blend. Ensure the seafood is evenly coated. Set aside.
  3. Cook the Vegetables:
    • In a large skillet, heat the olive oil over medium heat.
    • Add the chopped bell pepper and onion. Sauté until softened, about 5 minutes.
    • Add the minced garlic and cook for another 1-2 minutes until fragrant.
  4. Cook the Seafood:
    • Add the seasoned shrimp and salmon to the skillet. Cook for about 4-5 minutes, turning occasionally until the seafood is cooked through and opaque.
  5. Combine with Rice:
    • Pour in the chicken or seafood broth and lemon juice. Stir well.
    • Add the cooked rice to the skillet and mix until everything is well combined and heated through.
  6. Serve:
    • Garnish with fresh parsley.
