Cajun Seafood and Rice π€π₯π
Ingredients:
Cajun Spice Blend:
- 1 tbsp garlic powder π§
- 1 tbsp onion powder π§
- 1/2 tbsp Old Bay seasoning πΏ
- 1 tsp lemon pepper π
- 1 tsp smoked paprika πΆοΈ
- 1 tsp chili powder πΆοΈ
- 1 tsp black pepper π
- 1 tsp Italian seasoning πΏ
- Pinch of salt π§
- 1/2 tsp cumin πΎ
Seafood and Rice:
- 1 lb shrimp, peeled and deveined π€
- 1 lb salmon fillet, cut into chunks π
- 2 cups cooked rice π
- 2 tbsp olive oil π«
- 1 bell pepper, chopped πΆοΈ
- 1 onion, chopped π§
- 3 cloves garlic, minced π§
- 1 cup chicken or seafood broth π²
- Juice of 1 lemon π
- Fresh parsley, chopped πΏ
Instructions:
- Prepare the Cajun Spice Blend:
- In a small bowl, combine all the spice blend ingredients. Mix well.
- Season the Seafood:
- In a large bowl, toss the shrimp and salmon chunks with the Cajun spice blend. Ensure the seafood is evenly coated. Set aside.
- Cook the Vegetables:
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped bell pepper and onion. SautΓ© until softened, about 5 minutes.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Cook the Seafood:
- Add the seasoned shrimp and salmon to the skillet. Cook for about 4-5 minutes, turning occasionally until the seafood is cooked through and opaque.
- Combine with Rice:
- Pour in the chicken or seafood broth and lemon juice. Stir well.
- Add the cooked rice to the skillet and mix until everything is well combined and heated through.
- Serve:
- Garnish with fresh parsley.
