Brazilian Coconut Flan 🥥

📋 Ingredients:

  • 400 ml of coconut milk
  • 200 ml of sweetened condensed milk
  • 4 eggs
  • 100 g of powdered sugar
  • 50 g of grated coconut
  • 1 teaspoon of vanilla extract
  • Liquid caramel for the mold

🥣 Instructions :

  1. Preheat your oven to 180°C (thermostat 6) and place a bathing dish in the oven filled with hot water.
  2. In a saucepan, heat coconut milk with sweetened condensed milk until the mixture is hot but not boiling.
  3. In a large bowl, whisk eggs with powdered sugar until the mixture is white.
  4. Add the grated coconut and vanilla extract to the egg mix.
  5. Gradually pour the warm milk mixture over the egg mixture while whipping continuously.
  6. Pour some liquid caramel in the bottom of a pudding or flan mold.
  7. Gently pour the preparation into the prepared mold.
  8. Place the mold in the oven pan-marie dish and bake in the ban-marie for about 40-45 minutes, or until the flan is coated and golden on top.
  9. Let cool completely before stripping and serving.
