Brazilian Coconut Flan 🥥
📋 Ingredients:
- 400 ml of coconut milk
- 200 ml of sweetened condensed milk
- 4 eggs
- 100 g of powdered sugar
- 50 g of grated coconut
- 1 teaspoon of vanilla extract
- Liquid caramel for the mold
🥣 Instructions :
- Preheat your oven to 180°C (thermostat 6) and place a bathing dish in the oven filled with hot water.
- In a saucepan, heat coconut milk with sweetened condensed milk until the mixture is hot but not boiling.
- In a large bowl, whisk eggs with powdered sugar until the mixture is white.
- Add the grated coconut and vanilla extract to the egg mix.
- Gradually pour the warm milk mixture over the egg mixture while whipping continuously.
- Pour some liquid caramel in the bottom of a pudding or flan mold.
- Gently pour the preparation into the prepared mold.
- Place the mold in the oven pan-marie dish and bake in the ban-marie for about 40-45 minutes, or until the flan is coated and golden on top.
- Let cool completely before stripping and serving.
