Baked Fish with Cherry Tomatoes and Olives

Baked Fish with Cherry Tomatoes and Olives๐Ÿ…๐ŸŸ

Ingredients:

To Season the Fish:

  • 1 fish fillet
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Cajun seasoning (Old Bay or Creole seasoning)
  • ยฝ teaspoon chili flakes
  • 1 teaspoon fish seasoning (optional)
  • ยฝ teaspoon salt
  • ยฝ teaspoon black pepper
  • 3 tablespoons cooking oil

For the Tomatoes and Olives:

  • 2 cups cherry tomatoes, cut in half
  • ยผ cup olives
  • 2 sprigs fresh parsley
  • 2 sprigs fresh thyme
  • 3 garlic cloves, minced or diced
  • ยฝ teaspoon of the mixed seasoning above
  • 2 tablespoons water
  • 3 tablespoons salted butter
  • Pinch of salt and pepper

Instructions:

Preheat the Oven:

Preheat your oven to 400โ„‰ (200โ„ƒ).

Season the Fish:

  1. Mix all the ingredients for the fish seasoning in a small bowl. Save 1 teaspoon of the seasoning mix for the tomatoes.
  2. Rub both sides of the fish fillet with the seasoning mixture.

Sear the Fish:

  1. Heat the cooking oil in a pan over medium heat.
  2. Sear both sides of the fish fillet for 1 minute each. The fish should not be fully cooked, but it should have a charred look.
  3. After both sides are charred, remove the fish from the pan and set it aside.

Prepare the Tomatoes and Olives:

  1. In the same pan over medium heat, add all the ingredients for the tomato mix (except the butter) and sautรฉ for about 3 minutes, stirring continuously.
  2. Add the butter to the pan and stir until melted and combined with the tomatoes and olives.

Bake the Fish:

  1. Place the fish in the middle of the pan with the tomato mixture. Ensure your pan is oven-safe; if not, transfer everything to a baking sheet or oven-safe pan.
  2. Put the pan in the preheated oven and bake at 400โ„‰ (200โ„ƒ) for 10 minutes, or until the fish is cooked through.
