Ingredients:
- 1 pound Italian sausage, casing removed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, thinly sliced
- 3 cloves garlic, minced
- 1 package (20 ounces) cheese tortellini
- 1 can (14.5 ounces) diced tomatoes
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Directions:
- Cook the tortellini according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium-high heat. Add the Italian sausage and cook until browned and cooked through, breaking it into pieces with a spatula. Remove the sausage from the skillet and set aside.
- In the same skillet, add the sliced bell peppers and onion. Cook until softened, about 5-7 minutes.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Return the sausage to the skillet and add the diced tomatoes, heavy cream, and Italian seasoning. Stir to combine and bring to a simmer.
- Add the cooked tortellini to the skillet and toss to coat with the sauce. Cook for another 2-3 minutes until heated through.
- Stir in the grated Parmesan cheese and season with salt and pepper to taste.
- Garnish with fresh basil if desired and serve immediately.
