Chicken with Garlic Parmesan Rice πππ§π§
Ingredients:
For the Chicken:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon paprika
- Salt and black pepper to taste
For the Garlic Parmesan Rice:
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley (optional, for garnish)
- Salt and black pepper to taste
Directions:
Prepare the Chicken:
- Season the chicken breasts with salt, black pepper, dried thyme, dried rosemary, and paprika.
- In a large skillet, heat olive oil over medium heat.
- Add the chicken breasts and cook for 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165Β°F (74Β°C). Remove the chicken from the skillet and set aside.
Prepare the Garlic Parmesan Rice:
- In the same skillet, add a bit more olive oil if needed and sautΓ© the minced garlic for 1-2 minutes, until fragrant.
- Add the rice to the skillet and stir to coat with the garlic and oil.
- Pour in the chicken broth and bring to a boil.
- Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Stir in the butter, grated Parmesan cheese, and season with salt and black pepper to taste.
- Garnish with chopped fresh parsley if desired.
Serve:
Slice the cooked chicken breasts and serve over the garlic Parmesan rice.
