Ingredients:

  • 150g dark chocolate, finely chopped
  • 100g unsalted butter, plus extra for greasing
  • 2 large eggs plus 2 egg yolks
  • 50g granulated sugar
  • 30g all-purpose flour
  • 1 tsp vanilla extract
  • Pinch of salt
  • 4 marshmallows
  • 50g crushed graham crackers

For the Topping:

  • Whipped cream
  • Extra dark chocolate, melted
  • More crushed graham crackers

Instructions:

Prepare Chocolate Mixture:

  1. In a double boiler, melt the dark chocolate and butter together until smooth. Remove from heat and let cool slightly.

Mix Eggs and Sugar:

  1. In a separate bowl, whisk together eggs, egg yolks, and granulated sugar until the mixture becomes pale and fluffy.

Combine and Bake:

  1. Gently fold the melted chocolate mixture into the egg mixture. Add flour, vanilla extract, and a pinch of salt; fold until just combined.
  2. Grease ramekins with butter and pour the batter into each, filling up to ¾. Push a marshmallow into the center of each ramekin.
  3. Bake in a preheated oven at 200°C until the edges are set but the center is still gooey (about 12-14 minutes).

Serve and Enjoy:

  1. Once baked, remove the ramekins from the oven and let them cool for a minute.
  2. Invert each ramekin onto a plate, gently tapping to release the cake.
  3. Top with whipped cream, drizzle with melted dark chocolate, and sprinkle more crushed graham crackers for the ultimate indulgence.
