Ingredients
- 6 ounces dry fettuccine pasta
- 1 (8 ounce) package cream cheese
- 6 tablespoons butter
- ½ cup milk
- ½ teaspoon garlic powder
- Salt and pepper to taste
- 2 skinless, boneless chicken breast halves – cooked and cubed
- 2 cups chopped fresh broccoli
- 2 small zucchini, julienned
- ½ cup chopped red bell pepper
Directions
- Begin by boiling a generous pot of lightly salted water. Add in the pasta and let it cook for 8 to 10 minutes until firm to the bite; then drain.
- As the pasta cooks, gently melt cream cheese and butter together in a skillet over gentle heat. Stir continuously until a smooth blend is formed.
- Add the milk gradually, infusing it with garlic powder, and adjusting with salt and pepper. Allow this mixture to thicken over three minutes of constant stirring.
- Incorporate the cooked chicken, broccoli, zucchini, and red bell pepper into this mixture. Let it cook for another 3 minutes on medium heat.
- Lower the heat, allowing the flavors to meld together and the vegetables to soften over a period of 5 minutes.
