Rotel Cream Cheese Sausage Balls Recipe

Ingredients:

  • 1 pound sweet or hot sausage, casings removed
  • 1 (16 ounce) container cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup chopped green onions (optional)
  • 1/2 cup Rotel diced tomatoes with green chilies
  • 1 egg, lightly beaten
  • 1 cup biscuit or pancake mix

Instructions:

  1. Preheat oven to 400°F.
  2. In a large bowl, combine sausage, cream cheese, cheddar cheese, green onions (if using), and Rotel. Mix well.
  3. Add egg and mix until combined.
  4. Gradually add biscuit mix and mix until a dough forms.
  5. Use a cookie scoop or spoon to form into balls.
  6. Place on a baking sheet lined with parchment paper.
  7. Bake for 15-20 minutes or until lightly browned.
  8. Serve warm and enjoy!

Note: You can also make these ahead of time and freeze for later use. Simply thaw and bake as directed.
