Healthy Vegetable Kofta Recipe
Ingredients
- 1 zucchini, grated
- 1 carrot, grated
- 1 potato, grated
- 4 tablespoons of oats
- 100 grams of grated cheese (optional, can use low-fat cheese)
- Fresh parsley, chopped
- 2 cloves of garlic, minced
- 2 eggs
- Ground black pepper to taste
- Salt as desired
- 1 teaspoon of olive oil
Preparation Method
- Squeeze the zucchini, carrots, and potatoes to remove excess water using a clean cloth or strainer.
- In a large bowl, mix all the ingredients (zucchini, carrots, potatoes, oats, cheese, parsley, garlic, eggs, black pepper, and salt) until well combined.
- Shape the mixture into kofta fingers.
- Heat a nonstick frying pan over medium heat and add a spoonful of olive oil.
- Place the kofta fingers in the frying pan and cook for 3-4 minutes on each side, until golden and crispy.
- Serve alongside a salad to complete your meal.
