Healthy Vegetable Kofta Recipe

Ingredients

  • 1 zucchini, grated
  • 1 carrot, grated
  • 1 potato, grated
  • 4 tablespoons of oats
  • 100 grams of grated cheese (optional, can use low-fat cheese)
  • Fresh parsley, chopped
  • 2 cloves of garlic, minced
  • 2 eggs
  • Ground black pepper to taste
  • Salt as desired
  • 1 teaspoon of olive oil

Preparation Method

  1. Squeeze the zucchini, carrots, and potatoes to remove excess water using a clean cloth or strainer.
  2. In a large bowl, mix all the ingredients (zucchini, carrots, potatoes, oats, cheese, parsley, garlic, eggs, black pepper, and salt) until well combined.
  3. Shape the mixture into kofta fingers.
  4. Heat a nonstick frying pan over medium heat and add a spoonful of olive oil.
  5. Place the kofta fingers in the frying pan and cook for 3-4 minutes on each side, until golden and crispy.
  6. Serve alongside a salad to complete your meal.
