Healthy Steak Fajita Roll-Ups

Healthy Steak Fajita Roll-Ups

Ingredients:

For the steak roll-ups:

  • 1 lb. thinly sliced sirloin steak, pounded thin, cut into 1″x3″ strips
  • 2 Tbsp avocado or olive oil, divided
  • 3 bell peppers (different colors), cut into thin strips
  • 1 large yellow onion, sliced into strips
  • 2-3 green onions, green parts sliced
  • Fresh parsley or cilantro, chopped

For the fajita seasoning:

  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper

Instructions:

  1. Whisk all fajita seasoning ingredients in a small bowl.
  2. Heat 1 tablespoon oil in a large skillet over medium-high heat.
  3. Add onions and bell peppers, season with half the fajita seasoning, and cook for 3-4 minutes until crisp-tender.
  4. Remove peppers and onions from the pan and set aside.
  5. Lay steak strips on a cutting board, sprinkle with remaining seasoning, and top with peppers and onions. Roll up and secure with toothpicks.
  6. Heat the remaining oil in the skillet over medium-high heat.
  7. Cook steak roll-ups for about 2 minutes per side until golden brown.
  8. Sprinkle with parsley/cilantro and green onions. Enjoy while hot!
