Ingredients:
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Cheesecake Filling:
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
For the Toppings:
- 1 cup caramel sauce
- 1 cup chocolate ganache (or melted chocolate)
- 1 cup chopped pecans
Instructions:
Prepare the Crust:
- πͺ In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are fully coated with butter and the mixture resembles wet sand.
- π§ Line a muffin tin with paper liners. Spoon about 2 tablespoons of the crust mixture into each liner and press firmly to form an even layer.
- βοΈ Refrigerate the crusts while you prepare the cheesecake filling.
Prepare the Cheesecake Filling:
- π₯ In a large mixing bowl, beat the cream cheese until smooth and creamy.
- π Add the powdered sugar and vanilla extract, and continue to beat until well combined.
- π₯ In a separate bowl, whip the heavy cream until stiff peaks form.
- πͺ Gently fold the whipped cream into the cream cheese mixture until fully incorporated and smooth.
Assemble the Mini Cheesecakes:
- π° Spoon or pipe the cheesecake filling over the prepared crusts, filling each liner nearly to the top.
- π₯ Use a spoon to smooth the tops.
Add the Toppings:
- π« Drizzle the caramel sauce over the tops of the mini cheesecakes.
- π« Drizzle the chocolate ganache or melted chocolate over the caramel.
- π₯ Sprinkle the chopped pecans on top.
Chill the Cheesecakes:
