Honey Chicken Kabobs
Ingredients:
- 1.5 pound boneless skinless chicken breast cut into 1-inch cubes
- 1/4 cup of honey
- 1/4 cup soy sauce
- 2 tablespoons of vegetable oil
- 2 tablespoons of apple vinegar
- 2 minced garlic cloves
- 1 teaspoon of ground ginger
- 1/2 teaspoon black pepper
- 1 red pepper, cut into 1-inch pieces
- 1 yellow pepper, cut into 1-inch pieces
- 1 red onion, cut into pieces
- Wooden skewers soaked in water for 30 minutes
Directions:
- In a medium bowl, whisk together honey, soy sauce, vegetable oil, apple cider vinegar, minced garlic, ground ginger, and black pepper.
- Add chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or up to 4 hours.
- Preheat the grill over medium-high heat. Thread the marinated chicken, red pepper, yellow pepper, and red onion on the soaked skewers.
- Grill the kabobs for 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
- Serve hot, topped with extra honey if desired.
