Honey Chicken Kabobs

Ingredients:

  • 1.5 pound boneless skinless chicken breast cut into 1-inch cubes
  • 1/4 cup of honey
  • 1/4 cup soy sauce
  • 2 tablespoons of vegetable oil
  • 2 tablespoons of apple vinegar
  • 2 minced garlic cloves
  • 1 teaspoon of ground ginger
  • 1/2 teaspoon black pepper
  • 1 red pepper, cut into 1-inch pieces
  • 1 yellow pepper, cut into 1-inch pieces
  • 1 red onion, cut into pieces
  • Wooden skewers soaked in water for 30 minutes

Directions:

  1. In a medium bowl, whisk together honey, soy sauce, vegetable oil, apple cider vinegar, minced garlic, ground ginger, and black pepper.
  2. Add chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or up to 4 hours.
  3. Preheat the grill over medium-high heat. Thread the marinated chicken, red pepper, yellow pepper, and red onion on the soaked skewers.
  4. Grill the kabobs for 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
  5. Serve hot, topped with extra honey if desired.
