Orange Infused Ricotta Peach Cookies

Ingredients

  • 1 cup ricotta cheese
  • 1/2 cup granulated sugar
  • 1/4 cup honey
  • 1/4 cup unsalted butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 ripe peaches, peeled and diced

Directions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the ricotta cheese, granulated sugar, honey, and softened butter until creamy and well combined.
  3. Beat in the egg, vanilla extract, and orange zest.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until combined.
  6. Gently fold in the diced peaches.
  7. Drop spoonfuls of batter onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes, or until edges are lightly browned.
  9. Let the cookies cool on a wire rack before serving.
