Ingredients:
- 1 lb ground beef or turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped (optional)
- 1 can (15 oz) refried beans
- 1 packet (1 oz) taco seasoning mix
- 1 cup shredded cheddar cheese
- 8 large flour tortillas
- Toppings (optional): salsa, sour cream, shredded lettuce, diced tomatoes, sliced jalapeรฑos
Instructions:
- In a large skillet, cook the ground beef (or turkey) over medium-high heat until browned and cooked through, breaking it up into crumbles as it cooks.
- Add the chopped onion, minced garlic, and bell pepper (if using). Cook for 5-7 minutes, until the vegetables are softened.
- Stir in the refried beans and taco seasoning mix. Cook for another 3-4 minutes, stirring frequently, until heated through and well combined.
- Warm the flour tortillas according to package instructions or preference.
- Spoon the beef and bean mixture onto each tortilla, spreading it out slightly in the center. Sprinkle each with shredded cheddar cheese.
- Fold in the sides of the tortilla, then roll up tightly from the bottom to enclose the filling.
- Optional: For a crispy exterior, heat a non-stick skillet over medium heat and lightly spray with cooking oil. Place each burrito seam-side down in the skillet and cook until golden brown and crispy, about 2-3 minutes per side.
